What these tests mean

  • Identity: the finished powder matches its specification for color, bulk density, moisture (water activity), pH and taste.
  • Microbiology: total bacteria (aerobic plate count), yeast and mold are below their limits, and E. coli is negative.
  • Heavy metals: arsenic, cadmium, mercury and lead are tested on the raw materials, all within limits. They are not tested on the finished product.

[Glossary]

How to read this certificate

What does “Pass” mean?

The result is within its specification, the limit or range set for this product. Every row on this certificate must pass before the batch is released.

What does “cfu/g” mean?

Colony-forming units per gram: a count of live microbes (bacteria, yeast or mold) in one gram of powder. A result like “< 10 cfu/g” means the count was below the lowest level the test reports.

What does “Negative in 10 g” mean?

No E. coli was found when a 10-gram sample of the powder was tested.

What does “NMT” mean?

Not more than: the maximum amount allowed. For heavy metals it's given in ppm (parts per million).

What is water activity (aW)?

A measure of how much free water is in the powder, on a scale from 0 to 1. Keeping it low (here, below 0.600) keeps the powder dry and makes it hard for microbes to grow.

Why do heavy metals say “Within limits (raw materials)”?

Heavy metals (arsenic, cadmium, mercury, lead) are tested on the raw materials, all within limits. They are not tested on the finished product, so the certificate shows the limit but no separate number for this batch.

What are identity tests?

Checks that the finished powder is what it should be: its color, bulk density, water activity, pH, color in water and taste are compared with the product's specification.
